AFAIR, iTunes uses the system default playback device. Did you try changing
that via the Audio/MIDI Setup app?

I don't believe that is strictly possible because of iTunes use of the sysem
default playback device. Certainly JACK can capture the stream, but if other
system sounds are played, they will go to the same device.
